Utah County Mom: Coconut syrup

This is my favorite syrup of all time!  I love it on just about everything – pancakes, waffles, french toast…or my favorite…crepes with Nutella and fresh strawberries.  Yum!  My mouth is seriously watering just talking about it.

My sister-in-law gave me the recipe.  I highly recommend trying it out.

6-7 T butter

3/4 c buttermilk

1 c sugar

1/2 t baking soda

1 t coconut extract

Place butter, buttermilk and sugar in a pot. Then
turn stove on medium and stir until butter melts and
sugar dissolves. Bring to a boil and boil one minute.
Remove from heat and add soda and flavoring. It
will bubble up; just continue to stir and give it a few
minutes for the ‘fizz’ to reduce before serving.

My sister in law makes a batch or two and freezes the leftovers in ice cube trays.  Then she just pops one or two cubes into the microwave for breakfast and voila!  It’s ready to eat!   I always end up inviting people over when I make this, so there isn’t any leftovers.
